Sweet Coconut...

Hi again,
Its been raining since morning and I'm building my anticipation to decorate the wedding cake this evening.  Last night I baked it and it is happily sitting in the fridge waiting for me to ice it.  Why I put it in the fridge? So it will be easier to layer and fill the cake with frosting.  And when I dirt ice it, the filling inside will set and it will be easier to handle the cake.  What is dirt ice?  It is actually a very thin layer of icing where you spread all over to keep the crumbs from surfacing when you want to actually ice the cake.

Get what I'm telling you? I don't know how to explain it here but that is as clear as I can go, sorry.  Okay, what did I bake yesterday?
Yesterday I baked some coconut cookies.  These cookies are light, fluffy and just melt in your mouth.  How to make them? Very easy..butter, sugar, one egg coconut and flour and the taste is magnificente..Love it.  I'll post the recipe for you okay.  Hope you like this post.  Wish me luck again...bye..

Sweet Meringue...

Hi again.

I'm back and I am more stable and quite happy again..haha.  My mixer is still working because of my beloved husband. He fixed it. I don't know how but the mixer is working and I'm so glad and relieved.  So, yesterday evening I baked some meringues.  Actually I baked two batches of it.  No, no one ordered it but my two boys were so loving it that when the first batch of meringues was cooling in the kitchen, they ate them all!  My husband was looking for it for tea and I told him it was cooling in the kitchen.  He asked me where?  I told him, it was on the kitchen counter.  And he told me he couldn't see any....so I went to the kitchen and saw that the whole dang thing was gone...puff...all gone.  Those two boys got a lecture from me and my husband about manners and always setting aside some for other people...hahaha.  See..it's not easy baking with boys who are growing up, they can eat anything and they have a large storing place for all the food that they ate.

Anyway, that was my first meringue and then I baked another batch for my husband and he loved it too. Looking at the recipe, I thought it would be as easy as ABC but making meringue requires patience a lot. You have to bake it at the lowest temperature for quite a long time.  Mine were not very big so I bake them at 100'C for 1 1/2 hours.  It is still not perfect in appearance but it was sweet, fluffy and yummy.  I love them and my husband is coming out with many suggestions on how I can improve.  Thanks honey, for your patience, support and most importantly for the understanding that the mixer is very important to me..love you.

Hope you enjoy the pictures.  See you next time..bye.

Sweet Rice Crispy

Hi...I'm back.
Today I bake rice krispies cookies.  It is actually a recipe from one of my favourite cooking book by Martha Day tittled 500 Cakes and Bakes.  Her recipe is Crunchy Jumbles where one of the main ingredient is rice krispies.  I baked mine with extra because I love rice krispies and I also add in some dark cocoa powder because you know why...right?  I love chocolate and cocoa too.

This cookie is very krispy and crunchy and yummy...love it and it is dangerous, very dangerous...why? Because I tend to eat more without me realising it.  I'm trying to keep my waist line down if you can remember me telling you and thankfully up until today I am still okay.  That is according to my Mr. Rizalman...hahaha I know what you're thinking..NO he is not lying...he loves me enough to tell me the truth when I need to hear it and I'm not just talking about my weight...hahaha.

Soon..I will be posting about my many collection of cook books and other books that I just love reading and maybe I'll post some recipes that I've tried.  Hope you like my cookies and I will bake some others and tell you about it okay...have a nice day. Bye for now..

Sweet Chocolate Chips and Oat Cookies...

Hi, everyone.  Sorry it took so long for this entry to come.  We just celebrated Aidil Adha and I would like to wish all of you out there `Selamat Hari Raya Aidil Adha'.  Last week, was a very tiring week.  I had to go for a course and at the same time I had to finish my friends orders of cakes.  Then on Saturday, I cooked for Aidil Adha.  I made the usual Rendang Daging, Ayam Masak Merah, Ketupat and also Bone Marrow Soup. It was tiring but worth the effort because I enjoy cooking and what makes me most happy is when everybody loves what I cooked.  Today, after cooking all day too because my sister in law and her cute sons came for lunch, I finally had the time to bake some cookies.  It was actually chocolate chips cookies but I would feel so guilty if I ate the cookies that I end up putting in some healthy ingredient...the oat (like its gonna make me feel less guilty...duh).  I'm watching my weight and I had always watched my weight because I'm suffering from hyperthyroidism and my weight will go up and down depending on my medication.  But its okay..I'm still here and able to do what I love most, baking.  I'm so grateful that even with my condition I am still able to care for the love of my life, Mr. Rizalman and my sons Aiman and Hilmi.  As for the cookies, they taste great and my family enjoyed it...hope you like my photos...see you soon.  Have a sweet dream y'all...
